Apple Cinnamon Energy Bars

  1. ½ cup dates

  2. 1 cup quick oats

  3. 1 organic apple, cored

  4. ½ cup pecans

  5. 1 TBSP almond meal

  6. 1 TBSP pure maple syrup, or honey

  7. 1 TSP cinnamon


  1. Preheat the oven to 350°F.

  2. Line a 9x9 inch baking dish with parchment paper, leaving an overhang, and set aside.

  3. Place the dates in a small bowl, and cover with hot water, and allow to soak for 10 minutes.

  4. Drain the dates and add them to the bowl of a food processor.

  5. Add the remaining ingredients and process until everything is finely chopped and mixed well.

  6. Press the mixture into the prepared baking dish and bake for 20-25 minutes.

  7. Allow to cool, then lift the bars out of the dish with the parchment overhang. Slice into bars, and store in refrigerator for up to one week.
