Ingredients
1 TSP whole grain mustard
2 TBSP fresh lemon juice
3 TBSP extra virgin olive oil
Juice from 1 orange
1 shallot minced
1 TSP minced garlic
1 cup strawberries sliced
1 cup pineapple sliced
½ cup chopped pecans toasted
6 cups baby spinach
Instructions
In a large salad bowl, whisk together mustard, lemon juice, orange juice, olive oil, shallot, and minced garlic.
Add remaining ingredients and toss well to coat. Serve immediately.
