Black Bean Sliders

  1. 1 can organic black beans rinsed and drained

  2. 2 cups cooked quinoa or brown rice

  3. 1 red bell pepper

  4. 2 cloves garlic

  5. 1 small yellow onion

  6. 1½ cups button mushrooms

  7. 1 TSP turmeric

  8. 1 TSP cumin

  9. salt and pepper to taste


  1. In a sauté pan, add coconut oil until liquefied, and add bell pepper, garlic, onion, mushrooms.

  2. Sauté for 4 minutes until onions are lightly brown.

  3. Add veggies to a food processor, along with black beans and rice; pulse until everything is combined.

  4. If you need moisture, add 2 tbsp of veggie broth.

  5. Form into patties, and grill in a pan with 2 tbsp coconut oil.

  6. Grill 3 minutes on each side.

  7. Serve on butter lettuce, with a dollop of hummus.
