2 whole chicken breasts grilled
1 whole red bell pepper chopped
1 garlic clove minced
2 cups button mushrooms chopped
salt & pepper to taste
Season chicken with salt and pepper and grill, chop. Remove from pan.
Saute vegetables in coconut oil until tender.
Mix veggies and chicken, add mashed avocado or hummus, toss, and serve over butter lettuce.
