Greek Turkey, Rice Tzatziki Bowl

INGREDIENTS:
1/2 cup Brown Rice (dry, rinsed)
1 1/2 tsps Extra Virgin Olive Oil
12 ozs Extra Lean Ground Turkey
1/2 Yellow Onion (medium, chopped)
1 1/2 tsps Cumin
1 1/2 tsps Greek Seasoning (plus more for garnish)
1/4 cup Water
1/3 head Green Lettuce (shredded)
1 Tomato (medium, sliced)
1/2 cup Tzatziki
DIRECTIONS:
Cook the rice according to the package directions.
Meanwhile, heat the oil in a large pan over medium heat. Add the turkey and onion and cook for five to seven minutes, breaking up the meat as it cooks. Add the cumin and Greek seasoning. Add the water and cook for three to five minutes, stirring, until the water has evaporated.
Divide the cooked rice, turkey mixture, lettuce, tomatoes, and tzatziki evenly into bowls. Enjoy!
NOTES:
Leftovers
Refrigerate the ingredients separately in airtight containers for up to three days. Alternatively, divide the ingredients evenly into meal prep containers with the fresh vegetables and tzatziki on top.
Serving Size
One serving is approximately one cup each of cooked rice, turkey, and fresh vegetables, along with 1/4 cup of tzatziki.
More Flavor
Add smoked paprika, salt, and pepper to the meat mixture. Add fresh herbs and pickled red onions to the bowls.
Additional Toppings
Feta cheese, cucumber slices, and/or olives.
