Moroccan Salad

Ingredients

  1. ½ cup uncooked quinoa

  2. ½ cup cooked chickpeas

  3. 20 cherry tomatoes quartered

  4. 1 medium cucumber diced

  5. 1 small courgette sliced thickly

  6. 1 small aubergine sliced thickly

  7. 15 black olives

  8. ¼ pomegranate seeds only

  9. 2 garlic cloves finely chopped

  10. 3 tbsp olive oil

  11. ½ tsp chilli

  12. 1 tsp cumin

  13. 1 tsp sweet paprika

  14. handful of fresh mint chopped thin

  15. salt & pepper

Instructions

  1. Mix all together & Serve
