Spicy Melon & Cucumber Ribbon Salad

INGREDIENTS:


1/2 Cucumber (medium, thinly sliced into ribbons)


1/4 Honeydew Melon (medium, peeled, seeds removed and thinly sliced)


1 tbsp Extra Virgin Olive Oil


1/2 Lime (small, juiced)


1/2 Jalapeno Pepper (small, seeds removed, diced)


Sea Salt & Black Pepper (to taste)


2 tbsps Mint Leaves



DIRECTIONS:


  1. Arrange the cucumber and melon on a plate, alternating between pieces.

  2. In a small bowl, whisk together the oil, lime juice, jalapeno, salt, and pepper. Pour it over the salad.

  3. Garnish with mint leaves and enjoy!


 NOTES:



Leftovers


Best enjoyed fresh. Refrigerate in an airtight container for up to one day.


Serving Size


One serving is approximately 2/3 cup.


More Flavor


Add pickled red onion and feta cheese.
