Thai Cucumber Salad



INGREDIENTS:


1 Cucumber (medium, thinly sliced)


1 tbsp Tamari


2 tsps Avocado Oil


2 tsps Lime Juice


1 1/2 tsps Fish Sauce


1 tsp Coconut Sugar


1/2 tsp Chili Flakes


3 tbsps Raw Peanuts (roughly chopped)


3 tbsps Cilantro (roughly chopped)



DIRECTIONS:


  1. Add all of the ingredients to a large container with a lid or mason jar. Shake vigorously until the cucumber is well-coated.

  2. Divide evenly between bowls and enjoy!


 NOTES:


Leftovers

Best enjoyed immediately.


Serving Size

One serving is about 1 1/2 cups. One large takeout soup container was used to make two servings. If you're making more than two servings, be sure to use a bigger container or bowl with a lid.


Make it Vegan

Omit the fish sauce.
