Thai Chicken Skewers

  1. For the Chicken

  2. 1 lb. organic chicken tenders - put on wooden skewers

  3. salt pepper and tamari sauce to taste

  4. Coconut oil for grilling

  5. Cilantro for garnish optional

For the Sauce

  1. 1/4 cup peanut butter

  2. 2 TSP lime juice

  3. 4 TBSP tamari sauce

  4. cup ¼-½water depending on how thick you like your sauce


  1. Season the chicken with salt and pepper. Heat a grilling pan over medium high heat. Add some oil and grill the chicken skewers until done, about 7-8 minutes. Drizzle with tamari sauce and grill for another minute.

  2. While the chicken is cooking, stir all sauce ingredients together in a small bowl. Adjust the amount of water added to your liking. Less water makes it more of a dip while more water makes it more of a sauce.

  3. Serve the hot chicken skewers with the peanut sauce.
