4 oz. prepared chicken breast
1⁄2 cup mango, chopped
1⁄2 avocado, cubed
1 large tomato, cubed
2 TBSP of lime vinaigrette (recipe below or just use olive oil and lime)
6 large basil leaves, sliced thin
4 large Napa cabbage leaves
Juice of 2 limes
1/2 TSP sea salt
1 TSP honey
1⁄4 cup olive oil
Place all ingredient in bowl and whisk for 30 seconds, place in airtight container
Chop one serving of chicken breast, place in a bowl
Add mango, avocado, tomato and vinaigrette.
Season to taste, and toss gently, add in basil.
Divide chicken mixture among cabbage leaves. This will make 2 servings.
