Ingredients:
1 1/2 cups Chickpeas (cooked, drained and rinsed)
1/3 Cucumber (diced)
3 stalks Green Onion (chopped)
3 tbsps Parsley (chopped)
3/4 Lime (juiced)
3 tbsps Feta Cheese (crumbled)
1 1/8 tsps Extra Virgin Olive Oil Sea Salt & Black Pepper (to taste)
3/4 Avocado (diced)
Directions:
Combine all ingredients except avocado together in a large mixing bowl. Mix well with a spatula. Top with avocado when ready to serve. Enjoy!
