Chickpea, Avocado, & Feta Salad


Ingredients:

  • 1 1/2 cups Chickpeas (cooked, drained and rinsed)

  • 1/3 Cucumber (diced)

  • 3 stalks Green Onion (chopped)

  • 3 tbsps Parsley (chopped)

  • 3/4 Lime (juiced)

  • 3 tbsps Feta Cheese (crumbled)

  • 1 1/8 tsps Extra Virgin Olive Oil Sea Salt & Black Pepper (to taste)

  • 3/4 Avocado (diced)

Directions:

  1. Combine all ingredients except avocado together in a large mixing bowl. Mix well with a spatula. Top with avocado when ready to serve. Enjoy!
