This sweet treat is a perfect example of eating the things we love in the healthiest way possible – the Eat Naughty Nice way!
Ingredients
Brownie Layer:
1 cup almond meal
2 tbsp coconut flour
¼ tsp sea salt
½ tsp cinnamon
¼ cup cocoa powder
2 tbsp coconut oil melted
2 tbsp honey
1 tsp vanilla extract
1 pastured egg
Caramel Layer:
10 large dates pitted
1 tsp vanilla extract
3 tbsp boiling water
1/3 cup creamed coconut butter
a little less than a ¼ tsp sea salt
Chocolate Layer:
½ cup dark chocolate chips organic and 70 % cocoa or higher
1 tbsp coconut oil
1/8 tsp sea salt
Instructions
Brownie Layer:
Preheat oven to 350 degrees. Use a deep muffin pan. Greased with coconut oil, or use paper liners.In a large bowl, blend almond meal and coconut flour. Add salt, cinnamon, and cocoa and blend with a fork. Stir in the coconut oil, honey, vanilla and egg. Blend until completely mixed.Spoon into 6 cups, and bake for 14 min. When done let cool. ( You can place in the freezer to speed up the cooling process).
Caramel Layer:
Add dates and boiling water to a food processor and blend until smooth. Add remaining ingredients and blend again until smooth. Pour over cooled brownie layer and cool again.
Chocolate Layer:
In a double boiler, add chocolate, coconut oil and salt. Stir until melted. Pour over cooled caramel layer and cool again.
