Irresistible Chocolate Caramel Brownie Bites

This sweet treat is a perfect example of eating the things we love in the healthiest way possible – the Eat Naughty Nice way!


Ingredients

Brownie Layer:

  1. 1 cup almond meal

  2. 2 tbsp coconut flour

  3. ¼ tsp sea salt

  4. ½ tsp cinnamon

  5. ¼ cup cocoa powder

  6. 2 tbsp coconut oil melted

  7. 2 tbsp honey

  8. 1 tsp vanilla extract

  9. 1 pastured egg

Caramel Layer:

  1. 10 large dates pitted

  2. 1 tsp vanilla extract

  3. 3 tbsp boiling water

  4. 1/3 cup creamed coconut butter

  5. a little less than a ¼ tsp sea salt

Chocolate Layer:

  1. ½ cup dark chocolate chips organic and 70 % cocoa or higher

  2. 1 tbsp coconut oil

  3. 1/8 tsp sea salt

Instructions

Brownie Layer:

  1. Preheat oven to 350 degrees. Use a deep muffin pan. Greased with coconut oil, or use paper liners.
In a large bowl, blend almond meal and coconut flour. Add salt, cinnamon, and cocoa and blend with a fork. Stir in the coconut oil, honey, vanilla and egg. Blend until completely mixed.
Spoon into 6 cups, and bake for 14 min. When done let cool. ( You can place in the freezer to speed up the cooling process).

Caramel Layer:

  1. Add dates and boiling water to a food processor and blend until smooth. Add remaining ingredients and blend again until smooth. Pour over cooled brownie layer and cool again.

Chocolate Layer:

  1. In a double boiler, add chocolate, coconut oil and salt. Stir until melted. Pour over cooled caramel layer and cool again.
