2 cups freshly grated coconut
4 cups unbleached flour, or 2 cups coconut flour and 2 cups gluten free flour-mixed
2 TSP baking powder
1½ cup sugar or coconut sugar
1½ cups water
Preheat oven to 350 F.
Take coconut and baking powder and mix.
Then take the sugar and water and add to the coconut mixture. Gradually, add flour little by little and mix well.
You can use extra flour if needed, if the batter is too sticky. Knead dough.
Break dough into pieces of equal portions. You can make two loaves, I divided it into 3 small loaves. Once the loaves are log-shaped, roll them in aluminum foil and place them in pre-heated oven for about 1 hour or a little longer.
Once they are done, remove and serve hot or at room temperature.
