Ingredients:
3 pear, peeled and diced
3 cups unsweetened almond milk
3/4 cup white chia seeds
3/4 tsp pure vanilla extract
3/4 cup vegan white chocolate
2.5 tsp vegan vanilla protein powder
Optional:
1 pear for garnishing
vegan white chocolate for garnishing
Directions:
NOTE: Make this dessert the night before or at least an hour prior to serving to allow the chia pudding to “gel up”
In a small saucepan, add almond milk, white chocolate, diced and peeled pear, and pure vanilla extract and bring to a simmer (until all the white chocolate is melted)
Transfer the mixture to a blender and blend until smooth3
Pour the white chocolate pear mixture and chia seeds to a glass bowl stir well and plastic wrap the bowl and then place in the fridge. Stir again 2 hours later, let sit over night.
